Elaine Baum’s Oatmeal Cookies
1 c. shortening or marg.
2 eggs
1 c. sugar
1 c. brown sugar
1 ½ c. flour
1 t. salt
1 t. soda
3 c. oatmeal
2 t. vanilla
½ c. nuts &/or choc. chips (both can be omitted)
Bake at 375 for 8-9 min. until chewy.

This looks like a good recipe! I must have lost my mind because I volunteered to make cookies for my husband's Sunday school class when the kids have birthdays. I think Oatmeal cookies would be good for that. Sorta healthy?
