It turned out well? I've been looking for a good minestrone recipe too, because The Olive Garden's minestrone has me spoiled to death.

I made it last night because of your recommendation, with just one little substitution to make it vegan. I didn't even have time to try a spoonful before B and I ran out the door for a date, I just told the kids, "Dinner's on the stove!" It was a huge hit with garlic breadsticks (I made the bread, eldest daughter seasoned and baked them). TWO THUMBS UP—finally I have a yummy, edible minestrone recipe! I'm so glad you found it, tried it, liked it, linked it!
